These smell so good when you are cooking them! They’re so simple, quick, and gluten/grain free and they would make a wonderful dessert when you are short on time or need a quick dessert to serve to guests.
Serves 4.
Ingredients:
3 medium bananas, sliced in slight diagonal slices
2 Tbs. salted butter
¼ cup coconut palm sugar
2 Tbs. full-fat coconut milk, cold
1/8 tsp. each cinnamon, ground nutmeg, and ground cardamom
2 dashes freshly ground pepper
1 dropper full NuNaturals liquid vanilla stevia
Vanilla coconut milk frozen dessert (dairy-free ice cream)
Directions:
In a medium saucepan over medium heat, melt the butter. When it’s melted, add the coconut sugar and stir it in. Add the coconut milk and blend thoroughly. Stir frequently as you add the spices, pepper, and stevia, cooking for about 3 minutes until the mixture is hot and bubbly and resembles a dark caramel sauce. Reduce the heat and add the banana slices and heat through. Serve in bowls over the ice cream and top with whipped cream if you like. Enjoy!!
